 - 1 cup (220 g) brown sugar

 - 1 cup (200 g) crushed pineapple (drained)
 - ½ cup (45 g) shredded coconut (optional)
 - ½ cup (60 g) chopped walnuts or pecans (optional)
 
For the Cream Cheese Frosting:
- 8 oz (225 g) cream cheese, softened
 - ½ cup (115 g) unsalted butter, softened
 - 3 cups (360 g) powdered sugar
 - 1 tsp vanilla extract
 - 1–2 tbsp heavy cream or milk (for smoother texture)
 
Instructions
Step 1: Prepare the Oven and Pan
Preheat oven to 350°F (175°C).
Grease and flour a 9×13-inch baking pan (or two 8-inch round pans if you prefer a layer cake).
Step 2: Mix the Dry Ingredients
In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
Step 3: Mix the Wet Ingredients
In a large bowl, beat eggs, sugar, brown sugar, oil, and vanilla until smooth.
Add the grated carrots, crushed pineapple, and coconut. Stir until combined.
Step 4: Combine
Gradually add the dry ingredients into the wet mixture and mix until just blended.
