Cheese Crackers

Ingredients

  • 1 cup (120 g) all-purpose flour
  • 4 tbsp (60 g) cold unsalted butter, cubed
  • 8 oz (225 g) sharp cheddar cheese, shredded
  • ½ tsp salt
  • ¼ tsp paprika (optional, for color and depth)
  • ¼ tsp garlic powder (optional, for extra flavor)
  • 2–3 tbsp cold water (as needed)

Instructions

1. Make the dough
In a food processor, combine flour, salt, butter, and cheese.
Pulse until the mixture looks like coarse crumbs.
Add 1 tablespoon of water at a time until the dough just comes together.

2. Chill the dough
Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
(Chilling helps make them crispier.)

3. Roll and cut
Preheat oven to 375°F (190°C).
Roll the dough out on a lightly floured surface until very thin (about ⅛ inch or 3 mm).
Cut into small squares using a knife or pizza cutter.
Poke a tiny hole in the center of each cracker with a toothpick for the signature look.

4. Bake
Transfer to a parchment-lined baking sheet.
Bake for 12–15 minutes, or until golden and crisp.
Cool completely before storing.

Storage

  • Store in an airtight container for up to 1 week.
  • To re-crisp, bake for 2–3 minutes at 350°F (175°C).

Variations

  • Spicy: Add ¼ tsp cayenne pepper or chili powder.
  • Herby: Mix in dried thyme, rosemary, or Italian seasoning.
  • Different cheeses: Try Parmesan, Gouda, or pepper jack for new flavors.
